This year, Clemson University reached a major milestone by participating for the first time in the Association of Public and Land-Grant Universities’ (APLU) “Scoops of Science” University Creamery Reception on Capitol Hill in Washington, D.C.

The annual event brought together more than 20 university creameries from across the country to serve their products to policymakers, highlighting how public and land-grant universities are driving agricultural innovation, food science education and economic development.

Clemson University’s invitation to participate showcased South Carolina’s leadership in dairy and food science on a national stage. Clemson’s Creamery serves as a hands-on teaching and research facility where students gain practical experience in dairy production, food safety, product development and entrepreneurship, while faculty and students conduct research that advances precision dairy science, genetic optimization and sustainable food production.

Clemson Blue Cheese Dressing IV

Servings: 8

½ cup Buttermilk

¼ cup Vegetable oil

2 Tbsp Chives, chopped

3-ounces Clemson Blue Cheese, crumbled

¼ tsp Ground white pepper

In a blender or food processor, blend buttermilk, oil, chives, pepper and half the Clemson Blue Cheese until smooth; stir in remaining Clemson Blue Cheese.
